Japanese for Tofu Shopping: Asking Which Firmness Suits Your Recipe
Learn to ask a tofu shop staff which tofu type—木綿, 絹ごし, 充填, 水切り—works for frying or simmering, using 〜に向いていますか and 〜はどちらがいいですか.

When you buy tofu in Japan for a specific dish, the type matters. Firm 木綿 (momen) holds shape when fried or simmered; soft 絹ごし (kinugoshi) suits soups and cold dishes; 充填 (jūten) is poured into containers and tends to be softer; 水切り (mizukiri) is drained and firmer. This lesson teaches you to describe your dish with 〜を作ります and ask a shopkeeper which tofu is suitable. You will practice polite questions like 〜に向いていますか and 〜はどちらがいいですか, and learn to understand suggestions. Remember: preferences vary, so staff answers are recommendations, not rules.
By the end, you can…
- name four common tofu types in Japanese: 木綿, 絹ごし, 充填, 水切り.
- describe my dish using 〜を作ります and ask which tofu is suitable.
- ask whether a tofu type is good for frying or simmering with 〜に向いていますか.
- ask for a recommendation between two options using 〜はどちらがいいですか.
Listen once. Try it slowly. Then say it without looking.

Which one is firm cotton tofu?
Momen tōfu wa dochira desu ka.
Use when you see several packages and want to locate 木綿. どちら is polite for 'which one' (of two or more).
Do you have silken tofu?
Kinugoshi tōfu wa arimasu ka.
Ask if a specific type is in stock.
I'm making yaki tofu (grilled tofu). Which is better?
Yaki tōfu o tsukurimasu. Dochira ga ii desu ka.
Describe your dish with 〜を作ります, then ask for a recommendation between two types. 焼き豆腐 here refers to the dish you are making; if you mean the firm grilled tofu product sold in shops, note that it is itself a tofu type.
Is it suitable for simmered dishes?
Nimono ni muite imasu ka.
Use 〜に向いていますか to ask if a tofu type suits a cooking method.
Which one is hard to break apart?
Kuzure nikui no wa dore desu ka.
崩れにくい describes tofu that holds shape. Useful when you plan to stir-fry or simmer.
Pronunciation guides are approximate. Slow playback keeps the original pitch.
Make it make sense
Useful pattern
Use 〜は〜に向いていますか to ask if a thing suits a purpose. (Is momen suitable for grilling?). Use 〜はどちらがいいですか to ask which of two is better: 木綿と絹ごしはどちらがいいですか (Which is better, momen or kinugoshi?). To describe your dish, say 〜を作ります: 麻婆豆腐を作ります (I'm making mapo tofu).
When to use it
Use these patterns at a tofu shop when you know your cooking method but not the tofu type. For frying or simmering, ask 崩れにくいのはどれですか or 煮物に向いていますか. For a cold dish or soup, ask (How about kinugoshi?). If the shop has 充填 or 水切り, ask 充填は崩れにくいですか (Is jūten hard to break?) or (Is mizukiri good for grilling?). Staff may say おすすめは木綿です (Momen is recommended) or どちらでも大丈夫です (Either is fine). Treat these as suggestions.
Listen to each line, then take one part and reply out loud.
Excuse me, I'm making mapo tofu. Which is better, momen or kinugoshi?Sumimasen, mābō tōfu o tsukurimasu. Momen to kinugoshi wa dochira ga ii desu ka.
If it's mapo tofu, momen is recommended, since it's hard to break apart.Mābō tōfu nara, kuzure nikui momen ga osusume desu.
I see. Is mizukiri suitable for grilled dishes?Sō desu ka. Mizukiri wa yakimono ni muite imasu ka.
Mizukiri has been drained, so it's suitable for both grilled and simmered dishes.Mizukiri wa mizu o kitte aru node, yakimono ni mo nimono ni mo muite imasu yo.A little context goes a long way
In Japanese shops, staff often give recommendations rather than absolute rules. Phrases like おすすめです (it's recommended) or 〜がいいと思います (I think ~ is good) signal a suggestion. It's polite to acknowledge with そうですか or わかりました. If you have a preference, you can say (I like momen) to guide the conversation. Avoid demanding a guarantee; instead ask どちらがいいですか and listen.
One thing to watch for
Translating 'Is momen suitable for frying?' as
The particle に alone after a verb is not natural here; のに nominalizes the verb. (Is it suitable for simmering?).
Your turn
Try answering out loud before checking a possible answer.
1Ask the shopkeeper which is better for simmering: momen or kinugoshi.
