Mandarin Chinese: Fixing a Wrongly Prepared Dish Politely
Learn to tell a restaurant that your dish was prepared incorrectly, using the model sentence 'I ordered this without cheese,' and ask clearly for it to be fixed.

Sometimes the problem is not a missing dish but a dish made the wrong way. You asked for no cheese, no cilantro, or less oil, and it arrived with the wrong preparation. In Mandarin Chinese, you can point this out politely with a few short patterns. The key sentence is 我点的是不加奶酪的 (wǒ diǎn de shì bù jiā nǎilào de), literally 'what I ordered is the one without cheese.' This lesson teaches you to state the original order, explain the preparation problem, and ask the server to fix it. You will practice polite restaurant language, including 不好意思 (bù hǎoyìsi) and 麻烦你 (máfan nǐ). All examples use simplified Chinese and pinyin with tone marks.
By the end, you can…
- say that I ordered a dish without a specific ingredient.
- explain that the dish was prepared incorrectly and ask for it to be fixed.
Listen once. Try it slowly. Then say it without looking.

我点的是不加奶酪的。
What I ordered is the one without cheese.
wǒ diǎn de shì bù jiā nǎilào de
Use this to remind the server of your original order. 我点的是 (wǒ diǎn de shì) means 'what I ordered is'; 不加 (bù jiā) means 'not adding'.
这个菜做错了。
This dish was made incorrectly.
zhège cài zuò cuò le
A direct but neutral way to say the preparation is wrong. 做 (zuò) means 'make/cook'; 错 (cuò) means 'wrong'.
里面有奶酪。
There is cheese in it.
lǐmiàn yǒu nǎilào
Point out the specific problem. Replace 奶酪 (nǎilào, cheese) with another ingredient, such as 香菜 (xiāngcài, cilantro) or 辣椒 (làjiāo, chili).
麻烦你帮我换一份。
Please help me exchange it for another one.
máfan nǐ bāng wǒ huàn yí fèn
A polite request to replace the dish. 麻烦你 (máfan nǐ) softens the request; 换 (huàn) means 'exchange'; 一份 (yí fèn) is a portion.
不好意思,可以重新做一份吗?
Sorry, could you make another one?
bù hǎoyìsi, kěyǐ chóngxīn zuò yí fèn ma
不好意思 (bù hǎoyìsi) is a gentle apology or attention-getter. 重新做 (chóngxīn zuò) means 'make again'.
Pronunciation guides are approximate. Slow playback keeps the original pitch.

Useful pattern
The pattern 我点的是……的 (wǒ diǎn de shì ... de) means 'what I ordered is the ... one.' Put the description of the dish between 是 and 的. For example, 我点的是不加奶酪的 (wǒ diǎn de shì bù jiā nǎilào de) means 'I ordered the one without cheese.' 我点的是不辣的 (wǒ diǎn de shì bú là de) means 'I ordered the one that is not spicy.' To name the problem, use 里面有…… (lǐmiàn yǒu ...), meaning 'inside there is ...': 里面有奶酪 (lǐmiàn yǒu nǎilào) means 'there is cheese in it.' Then ask for a fix with 麻烦你帮我换一份 (máfan nǐ bāng wǒ huàn yí fèn), 'please help me exchange it for another portion.'
When to use it
Use these sentences when the dish has arrived but was prepared incorrectly, not when an item is missing. If a dish never arrived, say 我点的菜还没来 (wǒ diǎn de cài hái méi lái), 'the dish I ordered hasn't come yet.' For a preparation problem, first get the server's attention with 不好意思 (bù hǎoyìsi), then state the original order with 我点的是……的, point out the problem with 里面有……, and finish with 麻烦你帮我换一份. Keep your tone calm and factual. In mainland China, 服务员 (fúwùyuán, waiter/server) is a common way to call a server, though 你好 (nǐ hǎo) is also fine.
Listen to each line, then take one part and reply out loud.
你好,不好意思。我点的是不加奶酪的。
Hello, excuse me. What I ordered is the one without cheese.nǐ hǎo, bù hǎoyìsi. wǒ diǎn de shì bù jiā nǎilào de好的,我看看。这个菜里面有奶酪。
Okay, let me take a look. There is cheese in this dish.hǎo de, wǒ kàn kan. zhège cài lǐmiàn yǒu nǎilào对,这个菜做错了。麻烦你帮我换一份。
Right, this dish was made incorrectly. Please help me exchange it for another one.duì, zhège cài zuò cuò le. máfan nǐ bāng wǒ huàn yí fèn没问题,我马上让厨房重新做一份。
No problem, I'll have the kitchen make another one right away.méi wèntí, wǒ mǎshàng ràng chúfáng chóngxīn zuò yí fènA little context goes a long way
In Chinese restaurants, polite indirectness works well. Starting with 不好意思 (bù hǎoyìsi) or 麻烦你 (máfan nǐ) shows you are not angry, just asking for help. Directly saying 做错了 (zuò cuò le) is acceptable when the mistake is clear, but adding 麻烦你 softens it. If the server offers to remove the cheese instead of replacing the dish, you can say 不用了,谢谢,请重新做一份 (bú yòng le, xièxie, qǐng chóngxīn zuò yí fèn), meaning 'No need, thanks, please make a new one.'
One thing to watch for
Saying 我不要奶酪 (wǒ bú yào nǎilào) when the dish has already arrived with cheese.
Try this instead: 我不要奶酪 means 'I don't want cheese' and sounds like a new order or a refusal, not a complaint about preparation. To fix an already-prepared dish, say 我点的是不加奶酪的 (wǒ diǎn de shì bù jiā nǎilào de), 'what I ordered is the one without cheese,' then 这个菜做错了 (zhège cài zuò cuò le), 'this dish was made incorrectly.'
Your turn
Try answering out loud before checking a possible answer.
1How do you say 'What I ordered is the one without cheese' in Mandarin?
Show a sample answer
我点的是不加奶酪的。 (wǒ diǎn de shì bù jiā nǎilào de)
This uses the 是……的 pattern to describe the original order. You can replace 奶酪 with other ingredients, such as 香菜 (xiāngcài).
2The dish arrived with cilantro, but you ordered it without cilantro. What two sentences can you use?
Show a sample answer
我点的是不加香菜的。里面有香菜。 (wǒ diǎn de shì bù jiā xiāngcài de. lǐmiàn yǒu xiāngcài.)
The first sentence states the original order; the second points out the problem. You could also say 这个菜做错了 (zhège cài zuò cuò le).
3How do you politely ask the server to replace the dish?
Show a sample answer
麻烦你帮我换一份。 (máfan nǐ bāng wǒ huàn yí fèn)
麻烦你 makes the request polite, 帮我 means 'help me,' and 换一份 means 'exchange one portion.' 不好意思,可以重新做一份吗? is also acceptable.
When a dish is prepared incorrectly, state your original order with 我点的是……的, point out the problem with 里面有……, and ask politely with 麻烦你帮我换一份.
