Chinese for the Market: Choosing Dry vs. Fresh Wood Ear Mushrooms
Learn to ask for 干的 or 新鲜的 木耳, and how to ask 怎么泡 at a Chinese market. Includes pinyin and tone marks.

At a Chinese market, you may see two kinds of 木耳 (mù'ěr, wood ear mushroom): 干的 (gān de, dry) and 新鲜的 (xīnxiān de, fresh). Dry wood ear is common and needs 泡发 (pào fā, soak to rehydrate). Fresh wood ear is sold ready to cook. In this lesson, you will learn to ask for the type you want and how to soak it. You will practice 要干的 (yào gān de, want dry) and 怎么泡 (zěnme pào, how to soak). The language is casual market Chinese. You will not learn prices or shop policies; those change. Instead, you will learn questions to ask staff and clear phrases to use.

木耳
wood ear mushroom
mù'ěr (moo-AR, with a falling tone on mù and a clear 'ar' on ěr)
The general word for this fungus. It is used for both dry and fresh forms.
干的
dry (as in dried goods)
gān de (gahn duh, with a high flat tone on gān and a neutral-tone de)
Use to describe dried wood ear or other dried goods. It contrasts with 新鲜的.
新鲜的
fresh
xīnxiān de (sheen-shen duh, with high flat tones on xīn and xiān and a neutral-tone de)
Use for fresh produce that is not dried. In a market, it often means 'not dried'.
泡发
to soak to rehydrate
pào fā (pow fah, with a falling tone on pào and a high flat tone on fā)
The action of putting dry wood ear in water until it softens and expands.
要干的
I want the dry one
yào gān de (yow gahn duh, with a falling tone on yào and a neutral-tone de)
A short way to choose dry wood ear when a seller shows you both types.
Pronunciation guides are approximate. Slow playback keeps the original pitch.
Make it make sense
Useful pattern
Use 要 + [type] + 的 to choose a type. For example, 要干的 (yào gān de) means 'I want the dry one.' 要新鲜的 (yào xīnxiān de) means 'I want the fresh one.' You can also say 要木耳 (yào mù'ěr) if you just want wood ear and do not care which type. To ask how to prepare it, use 怎么 + verb. 怎么泡 (zěnme pào) means 'how to soak.' 怎么吃 (zěnme chī) means 'how to eat.' These patterns are short and common in markets.
When to use it
Use 要干的 when you prefer dry wood ear because it keeps longer. Use 要新鲜的 when you plan to cook soon and want to skip soaking. Use 怎么泡 when you have dry wood ear at home and need to know how long to soak it. For example, you can ask: 干的怎么泡? (gān de zěnme pào?) 'How do I soak the dry one?' If the seller answers with a time, listen for numbers like 十分钟 (shí fēnzhōng, ten minutes) or 半小时 (bàn xiǎoshí, half an hour). You can also ask 泡多久? (pào duōjiǔ?) 'How long to soak?'
Listen to each line, then take one part and reply out loud.
你好,有木耳吗?
Hello, do you have wood ear mushrooms?Nǐ hǎo, yǒu mù'ěr ma? (nee how, yo moo-AR ma?)有,干的,也有新鲜的。
Yes, we have dry, and also fresh.Yǒu, gān de, yě yǒu xīnxiān de. (yo, gahn duh, yeh yo sheen-shen duh.)我要干的。怎么泡?
I want the dry one. How do I soak it?Wǒ yào gān de. Zěnme pào? (wor yow gahn duh. dzuh-muh pow?)用温水泡,泡半小时。
Soak it in warm water for half an hour.Yòng wēnshuǐ pào, pào bàn xiǎoshí. (yong wun-shway pow, pow ban shyao-shrr.)A little context goes a long way
In many Chinese markets, dry goods like 木耳 are sold by weight, and the seller may ask how much you want. A common reply is 半斤 (bàn jīn, half a jin) or 一斤 (yī jīn, one jin). A jin is 500 grams. Fresh wood ear is often sold in small bags or piles. It is polite to say 谢谢 (xièxie) when you finish. Do not assume the seller will offer advice; you can ask 怎么泡 or 泡多久. These questions are normal and welcome.
One thing to watch for
Saying 我要干 (wǒ yào gān) without 的, which can sound like 'I want dry' as a general adjective, not 'I want the dry one.'
Try this instead: Use 我要干的 (wǒ yào gān de) to mean 'I want the dry one.' The 的 makes it clear you are choosing a type of item. For example, 我要干的木耳 (wǒ yào gān de mù'ěr) 'I want dry wood ear.'
Your turn
Try answering out loud before checking a possible answer.
1How do you ask 'Do you have fresh wood ear?' in Chinese?
Show a sample answer
有新鲜的木耳吗? (Yǒu xīnxiān de mù'ěr ma?)
This uses 有...吗 to ask if something is available. 新鲜的木耳 means 'fresh wood ear.' You can also ask 有新鲜的吗? if the context is clear.
2You want dry wood ear. What do you say?
Show a sample answer
我要干的。 (Wǒ yào gān de.)
This is a short, natural way to choose the dry type. You can add 木耳: 我要干的木耳. Both are correct.
3How do you ask 'How long to soak?' in Chinese?
Show a sample answer
泡多久? (Pào duōjiǔ?)
This asks about duration. You can also ask 怎么泡? to ask how to soak. Both are useful; 泡多久 is more specific about time.
At the market, use 要干的 or 要新鲜的 to choose wood ear. Ask 怎么泡 or 泡多久 for soaking instructions. Keep it short and polite.
