How to Ask for Tofu Firmness at a Chinese Market
Learn to ask for 老豆腐, 嫩豆腐, or 内酯豆腐 at a wet market, and say what you're cooking. Master 要老的 and 做汤用 in casual Mandarin.

At a Chinese wet market, tofu is not just one thing. Vendors sell at least three common types, and the one you choose changes the dish. If you want firm tofu for stir-frying, you need to say 老豆腐. For soft tofu in soup, say 嫩豆腐. For silken tofu, often used cold or in dessert, say 内酯豆腐. This lesson teaches you exactly how to ask for the right firmness and explain what you're making. You'll practice the key phrases 要老的 (want firm) and 做汤用 (for soup). The register is casual, like a quick exchange at a market stall. You don't need long sentences. A few clear words get you the right block of tofu.
By the end, you can…
- name three common tofu types in Chinese: 老豆腐, 嫩豆腐, 内酯豆腐.
- ask for firm tofu using 要老的.
- say I'm making soup using 做汤用.
- ask a follow-up question about firmness or use.
Listen once. Try it slowly. Then say it without looking.

老板,有老豆腐吗?
Boss, do you have firm tofu?
lǎobǎn, yǒu lǎo dòufu ma?
Use 老板 to politely get the vendor's attention. 有...吗 is the standard yes/no question pattern.
我要老的。
I want the firm one.
wǒ yào lǎo de.
The 的 replaces the noun 豆腐. This is casual and common at the market.
做汤用。
It's for soup.
zuò tāng yòng.
A short reason phrase. 用 here means 'for the purpose of'. Vendors understand this instantly.
嫩豆腐怎么卖?
How do you sell the soft tofu?
nèn dòufu zěnme mài?
怎么卖 asks for price or unit. It does not mean 'how to sell' in a business sense.
内酯豆腐呢?
What about silken tofu?
nèizhǐ dòufu ne?
Use 呢 to ask about another item after a previous question. It means 'and what about...?'
Pronunciation guides are approximate. Slow playback keeps the original pitch.
Make it make sense
Useful pattern
The pattern 要 + adjective + 的 lets you choose a type without repeating the noun. 要老的 (yào lǎo de) means 'I want the firm one.' 要嫩的 (yào nèn de) means 'I want the soft one.' You can also say 要内酯的 (yào nèizhǐ de) for silken. This works because 的 stands in for 豆腐. Another useful pattern is 做...用 (zuò...yòng), meaning 'for making...'. 做汤用 (zuò tāng yòng) = for soup. 做菜用 (zuò cài yòng) = for cooking dishes. 凉拌用 (liángbàn yòng) = for cold mixing. These are short, natural, and very common at the market.
When to use it
Use 要老的 when the vendor shows you two blocks and asks which one. Use 做汤用 when you want to explain why you need soft or silken tofu. If you are not sure which type is right, ask 哪个做汤好? (nǎge zuò tāng hǎo?) meaning 'Which one is good for soup?' The vendor may point to 嫩豆腐 or 内酯豆腐. For stir-fry, say 炒着吃 (chǎo zhe chī) meaning 'to eat stir-fried.' For cold dishes, say 凉拌 (liángbàn). These phrases help the vendor guide you without you needing to know all the details.
Listen to each line, then take one part and reply out loud.
老板,有老豆腐吗?
Boss, do you have firm tofu?lǎobǎn, yǒu lǎo dòufu ma?有。你要老的还是嫩的?
Yes. Do you want firm or soft?yǒu. nǐ yào lǎo de háishi nèn de?要老的,做菜用。
I want firm, for cooking.yào lǎo de, zuò cài yòng.好,这块老的给你。
Okay, this firm piece for you.hǎo, zhè kuài lǎo de gěi nǐ.A little context goes a long way
At a wet market, vendors often ask 要老的还是嫩的? (yào lǎo de háishi nèn de?) to clarify. Answering with just 老的 or 嫩的 is fine. If you say 做汤用, the vendor may suggest 嫩豆腐 or 内酯豆腐. It is normal to point at the tofu you want. Politeness comes from tone and a brief 老板, not from long sentences. Do not assume all stalls carry all three types; availability changes daily.
One thing to watch for
Saying 我要老豆腐的 instead of 我要老的.
Try this instead: When the noun 豆腐 is already clear, use 要老的. 我要老豆腐的 sounds redundant and slightly unnatural. Say 要老的,做汤用。 (yào lǎo de, zuò tāng yòng.)
Your turn
Try answering out loud before checking a possible answer.
1How do you ask for firm tofu without repeating the word 豆腐?
Show a sample answer
我要老的。
The 的 replaces 豆腐. 要嫩的 is also correct for soft tofu.
2You are making soup. What short phrase tells the vendor?
Show a sample answer
做汤用。
This means 'for soup.' 做汤 is also fine, but 做汤用 is more natural in this context.
3What is the Chinese name for silken tofu?
Show a sample answer
内酯豆腐。
内酯 (nèi zhǐ) refers to the coagulant. 嫩豆腐 is soft but not the same as silken.
At the market, ask 有老豆腐吗? Then choose with 要老的 or 要嫩的. Add 做汤用 or 做菜用 to explain your dish. Keep it short, point if needed, and you'll get the right tofu.
